Theme: This dinner is for me, my family, and all the kids who never know what to say when asked “Where are you from?”
These plates are going to be a culinary journey through the Great Plains, Texas, East Coast, and Hawaii. I invite you to share these family style plates, as if you were sitting at Andi’s Table.

Menu:
“Amuse”

Texas
Where it all started, DFW Texas. 1994, Denton Texas. We lived here on several occasions. Chips and Salsa served at those OG Tex Mex Spots were a must!
– Ham and Beans with Fried Potato Match sticks

Midwest/all over
Funny Story, I can’t stand this dish. This one followed us everywhere. Hope this one is as good as my mom’s!
– Tuna Crudo with Avocado, Rice Crisps, and Pineapple Chile Verde and Spicy Mayo

Hawaii/Texas
In my sophomore year, my dad got stationed in Hawaii. We left Texas and arrived two days before my 17th Birthday. I requested Taco Bell. I’ll never forget that. By the end of my time there, I was eating Spicy Tuna Hand rolls from 7/11 every day after school.
– Dueling Meats and Three- Chicken Fried Pork Steak with Spiced Gravy, Smoked Chicken Thighs with Southern White BBQ, Kansas Caviar, Green Chile Grits, and Andi’s Mashed Potatoes, Martin’s Potato Dinner Rolls.

Carolina, Texas, Kansas
Meat and Threes are a Southern Staple. Imagine a large portion of great meat and three amazing sides! This version is a journey of several states. Starting with Chicken Fried Pork Steak done Texas-German style, representing Babe’s in Roanoke. Then we have Smoked and Grilled Chicken Thighs with Southern White BBQ Sauce, grilled chicken was always one of my birthday meals. For the Sides we will have an amazing Kansas Caviar like my mom used to make, Green Chile Grits, and Andi’s Mashed Potatoes and some hot rolls! Gotta have em’ at Andi’s table!
– Cherry Mash Parfait with Nilla Wafers and Citrus Syrup

Carolinas
In the Carolinas there’s a soda called Cheerwine, I never knew what it was until I moved back to Kansas and had Station 8 for the first time. Whenever I used to stay at Andi and Curtwood’s house we would always go to sonic and get “Cherry My-Lades” No idea what that meant, I just couldn’t say it right. My first job was at Sonic, and now here we are together.

Ever since I started this career, people have always asked me: “What made you want to become a Chef?” I never had a solid answer, until recently. Unlike many Chefs, I don’t come from a family of outstanding cooks. Coming from a Military and Educator household, meals were always on the table, but we were no stranger to Chef Boyardee and simple Midwest staples. Being an Army Brat meant moving. Every three years. Friends came and went, but one thing always made an impression. The food. The cultures. The stories. It all made sense. As a troubled kid in high school, I enrolled in a culinary class and that’s where it all came together. For the first time in my life, I was picked first and finally cared about something other than heavy metal and skateboarding. I got really good at it, and decided this is what I want to do with my life.
 
When I graduated high school, I moved to Kansas with my grandparents who helped me through Culinary school. This is where I learned all my fundamentals, under John Michael, our director here. So, I realized, it wasn’t one thing that led me down this path, but rather being a product of many environments. Living in such diverse areas and being immersed in amazing cultures of America has always captivated me. From the Spicy Tuna Hand rolls at the Kaimuki 7/11 to the GIANT chicken fries at Babe’s in Roanoke, Texas and the Cheer Wine Soda and Vinegar Sauce of the Carolinas. 
 
Moving so much was so challenging, but it all comes first circle. I never blamed my parents for their choices, because it was the right decision for raising my brother and me.
