About Side Dish Showdown

Together, WSU Tech and NICHE created a webisode-style cooking show where culinary and healthcare students collaborate to develop amazing side dish recipes, with a fresh spin. Their culinary creations must include fresh vegetables and promote healthier dietary choices, while still being delicious. This webisode showcases all participating students, with the winning team selected based on specific criteria outlined by the course instructors.

BEANS & GREENS

Side Dish Showdown at NICHE - Beans and Greens side dish

Ingredients:

  • Yield- 4 Servings, 1 cup each Cook Time- 15 minutes
  • Salad Ingredients
  • Spinach – 8 oz.
  • Radishes – about 8 thinly sliced
  • Cannellini Beans – 15 oz. can
  • Bulgar – ¼ cup before cooking
  • Water – ¾ cup
  • Sweet Onion – ½ onion thinly sliced
  • Feta – 1 Cup Crumbled
  • Dressing Ingredients
  • Red Wine Vinegar – 1/2 Cup
  • Oil – ½ cup
  • Honey – 2 ½ Tbsp
  • Lemon Juice – 3 Tbsp
  • Salt – 1 tsp
  • Pepper – 1 tsp

Instructions

  1. Measure out 1/4 Cup Bulgar and put into a saucepan with 3/8 Cup water, bring to a simmer then cover for 12 minutes.
  2. Take Bulgar off the heat and set aside for step 6.
  3. Combine Red wine vinegar, Honey, Oil, lemon juice, salt, and pepper in a mixing bowl and whisk together.
  4. Cut the sweet onion into thin slices and set aside for step 6. PREP
  5. Open a can of cannellini beans and set aside for step 6.
  6. Cut the radishes into thin slices and set aside for step 6.
  7. Combine Spinach, Cannellini beans, radishes, sweet onion, feta, and bulgar in a mixing bowl. COMBINE
  8. Add the vinaigrette to the mixing bowl and toss the salad ingredients together with the vinaigrette.

BRAISED RADISHES

Braised radishes a side dish in Side Dish Showdown at NICHE

Ingredients:

  • 10 Radishes quartered
  • 3 cups radish greens
  • ½ cup stewed tomato
  • 2 cups sliced sweet onion
  • ¾ cup balsamic vinegar
  • ¼ cup honey
  • 3 tsp salt
  • 1 tsp blk pepper
  • 4 garlic cloves
  • ½ tbsp rosemary
  • 1 tbsp basil
  • ¼ cup olive oil
  • ¼ cup shredded parmesan or pecorino romano

Instructions

  1. In small sauce pan, on medium heat, bring balsamic vinegar and honey to a simmer. Lower heat to medium-low and reduce sauce by half.
  2. Thoroughly wash radish plants to remove dirt. Separate radishes from greens, cut off stem and root from radish bulb, quarter cut bulbs. PREP
  3. Half sweet onion, cut into thin slices. Crush garlic cloves, removing skin, keep whole.
  4. Take radish greens and remove leaves from stems, set aside.
  5. Heat a sauté pan on medium heat, add oil to hot pan
  6. Add radishes, garlic, onion, rosemary, basil, salt, and pepper to pan, sauté until onions are opaque. SWEAT
  7. Add radish greens, continue sautéing until radishes and onion are golden brown. Add tomatoes, let warm through. SAUTE
  8. Remove from heat, drizzle reduced balsamic vinegar over radishes, and serve topped with shredded cheese. SEASON

Serves 4, ½ cup servings 30 min prep

LATIN BEAN SOUP

Side Dish Showdown at NICHE - Latin Bean Soup side dish

Ingredients:

  • 3 Tbsp Olive oil
  • 1/2 White onion Diced.
  • 2 Jalapenos deseeded and diced.
  • 4 cloves of garlic minced.
  • 1 16oz can of petite diced tomatoes
  • 2 16oz cans of black (1 can drained optional)
  • 3/4 Tbsp Chili flakes
  • 1 Tbsp Cumin
  • Salt and Pepper to taste
  • Crushed Tortilla Chips (garnish)

Instructions:

  1. Heat pot with olive oil at medium heat add onions and sweat till translucent and stir.
  2. Add jalapenos and cook till tender, stir in garlic gently, then add tomatoes. SWEAT
  3. Add black beans and bring pot to simmer. SIMMER
  4. Season with Chili flakes, Cumin, Salt, and pepper to taste.SEASON
  5. Serve with crushed tortilla chips and enjoy.GARNISH

Optional:

  • Smash beans with potato masher for a smoother consistency
  • Add peanuts as garnish.
  • Add group beef to make a main dish.

Yield: 8 servings ( ½ cup per serving) Prep time 5 mins/Cook time 25 mins

SANTA FE PILAF

Side Dish Showdown at NICHE - Santa Fe Pilaf side dish

Ingredients:

  • 1 cup cracked wheat
  • 1 ¼ cup water
  • 1 small Zuccinni
  • 1 small Yellow Squash
  • 1 ear of corn
  • 1 small roma tomato
  • ¼ onion, small diced
  • ¼ red pepper, small diced
  • ¼ green pepper, small diced
  • ½ Jalapeno, small diced
  • 1 Garlic clove, Minced
  • ½ can black beans, drained and rinsed
  • ½ lime, juiced
  • 1-2 Tbsp Vegetable oil
  • 1-2 Tbsp chili seasoning

Instructions:

  1. Bring water to boil, when rolling boil is achieved pour in cracked wheat. Mixing once with a fork, then remove from heat and cover for 10 minutes. Add salt, pepper, and olive oil(optional) to taste. PREP
  2. Dice all vegetables, small diced, mince garlic, shuck corn from husk, and separate corn from cob. Leave tomatoes separate, they will be added last.
  3. Add vegetable oil to skillet on medium heat, and add onions. Cook until fragrant. SWEAT
  4. Then add, black beans, garlic, corn, and jalapeno, cook until corn goldens.
  5. Fold in squash and zucchini, lime juice, and chili seasoning (to taste). Cook until softened apx, 10 minutes.
  6. Combine the cooked cracked wheat, cold tomatoes, and cooked vegetable mixture together COMBINE
  7. Salt and pepper to taste.

Yield: Aprox. 5 Time: 25 min

SWEET PEPPER POPPERS

Sweet Peppers Poppers a side dish in Side Dish Showdown challenge at NICHE

Ingredients:

  • 1 lb of Mini Sweet Peppers
  • 6 oz of Cream Cheese
  • 2 tsp of Ground Chile Paste
  • 2 Stalks of Green Onions (finely sliced)
  • 1 ½ oz of Baby Spinach
  • ½ of cup Finely Grated Cheddar

Instructions:

  1. Preheat the oven to 350F/180C. Line a large baking sheet with parchment paper.
  2. Slice the bell peppers lengthways and remove the seeds.
  3. Remove the stems from the spinach, then rough chop.PREP
  4. In a small mixing bowl, mix all ingredients, except the grated cheese.
  5. Microwave the halved and cleaned peppers for 1 min on high.
  6. Using a spoon, stuff the peppers with the cream cheese mixture, with a roughly uniform amount. STUFF
  7. Generously top with the grated cheese and place on the prepped baking sheet.
  8. Place in oven to bake for 10 minutes, or until the cheese has started to melt.
  9. Finally turn the oven to high broil and let cook for another 3 -5 minutes or until cheese starts to slightly brown. BROIL

Yield – 4 Servings, 3 Peppers = 1 Serving Time > 25 – 30min

SMASH SWEET POTATOES

Ingredients:

  • 2 Sweet potatoes
  • 2 Green onions
  • ½ cup Oil
  • 3 Tbsp Curry powder
  • 1 Tbsp Paprikas
  • 1 Tsp Salt
  • 1 Tsp Pepper

Instructions:

  1. Put oven on broil
  2. Chop the potatoes in rings and green onions on a bias PREP
  3. Dock potatoes with fork and wrap in saran wrap and microwave for 6 minutes
  4. Heat oil in the skillet then add to bowl then the seasoning and mix
  5. Let the potatoes sit, till they can be handled
  6. Smash potatoes with the back of a cup and coat in seasoning SEASON
  7. Put in Broiler on High for 10 minutes flip over then put in for 5 minutes or in tell crispy BROIL

Yield- 4 servings Cook times- 30 minutes
